You would be hard pressed to find many people that don’t love chocolate or candy for that matter. However, I wonder how many people have truly had the pleasure of eating gourmet candy. This brings me to another difference between the candies; on most websites that you would purchase the candy you can pick what flavours you like the best and create your own custom box of candy. There’s no need to worry if you or someone you know is watching their weight or is diabetic because gourmet candy comes in a sugar free variety as well.
As I stated before candy that is gourmet will not have been massed produced by machines in a factory, it is called gourmet because the companies selling it will have made all the candy from scratch. From my personal experience it is a real skill to working with both candy and chocolate. Fudge and caramel will be cooked the way it was many years ago in huge copper pots, the candy maker must stand over the pot stirring and watching it until it is perfect. Cooking candy a minute more than it should be can ruin a whole batch. Taffy will be kneaded and colored by hand, which is a very labor intensive job. Chocolate must be brought and kept at the perfect temperature in order to attain the correct texture, mouth feel, and shininess that it is supposed to have. It definitely takes a lot of patience and time to create the perfect candy, that’s why when a candy is homemade it is certainly reflected in the taste. If you have never been lucky enough to stand in the window of a store that still creates candy by hand then I suggest you look for some videos online because it is such an interesting process.
